WZTV FOX17 :: Newsroom - Special Reports - Day in the Life of the Biscuit Lady
Now, the story of one local lady who's rolling in the dough, literally.

Carol Fay Ellison is a Nashville celebrity.

She's famous for something slathered in butter and jelly.

And if you've had one you know just how good she is.

Fox 17's John Dunn spends a day in the life of the "Biscuit Lady"

It's 6:30 in the morning at the loveless cafe and that means it's time to make the biscuits.

Carol Fay: "This is where it all takes place."

Carol Fay Ellison has made so many great tasting biscuits that most people just call her the biscuit lady.

We can only show you the final moments before a biscuit is cut and then put in the oven.

Carol fay won't let us go near the dough.

And as far her biscuit bakin' recipe goes, forget it.

We're pretty sure it involves some combination of flour and milk and of course the "secret" ingredient that only Carol Fay knows.

But we figured it never hurts to ask.

Carol Fay: "no, hmm, hmm, hmm. Nope it's a secret!"

One secret we can share with you, Carol Fay says don't overwork the dough. A light tough and a gentle roll will get the job done.

Carol Fay: "flaky and soft, nobody wants a hard biscuit, nobody."

Biscuits are the loveless cafe's bread and butter.

But the homemade preserves are the sugar on top.

There are three varieties...strawberry, peach and blackberry.

"It's just fruit and sugar."

Carol Fay is in charge of making those too.

"So it's like a four hour process for the strawberries, and a five hour process for the peaches."

Right now she's making several batches of jam every day.

The loveless is preparing for their Christmas mail-order business and they need boxes and boxes full of jam.

Carol Fay: "That's not even near enough, that's just the beginning of it."

The loveless cafe is Carol Fay's second home.

She has worked here for 27 years, longer than any other current employee.

Carol Fay started as a dishwasher, but it's her biscuits that have made her famous.

Carol Fay: "I never thought it would happen to me, that I'd ever be on tv either."

She's been a guest on several network shows and inside the restaurant she's an icon.

Even other celebrities like the Predator's Jordin Tootoo and singer Kellie Pickler want to meet the biscuit lady.

At the loveless when you sit down you're given biscuits.

And there's never a complaint from customers.

Jeff Rodgers: "It was very good. Reminded me of when i was a small child and my grandmother used to make biscuits and all, so it was really good."

Cheryl Ramsey: "I don't know they're sweet, there is something sweet about them. And along with the strawberry jam...The homemade strawberry jam is just awesome."

After all this biscuit eating, it's back to the kitchen.

At the loveless cafe they like to say if you leave hungry they've done something wrong.

Carol Fay makes sure the biscuits are just right.

The Loveless Cafe serves about 5-thousand biscuits a day on weekends and will seat about 3-hundred thousand customers this year.

By the way Carol Fay recommends the fried chicken with a side of biscuits.Day in the Life of the Biscuit Lady
