Fresh Mango and Strawberry Tart

 

Prep Time: 35 minutes, Cook Time: 15 minutes, Serves 8

1 cup Wild Oats Unsalted Butter
1/2 c. confectioners’ sugar
2 c. organic unbleached flour
1/4 tsp. baking powder
1 (8 oz) package cream cheese, softened
1/4 c. sugar
1/4 c. Wild Oats Orange Juice
1 tsp. orange zest
1/2 c. heavy cream
2 c, fresh organic strawberries, washed and hulled
2 mangoes, diced
1/4 c. Wild Oats Apricot Fruit Spread
2 Tbsp. water

Preheat oven to 350 degrees F. In a large bowl cream together the butter and
sugar until light and fluffy. Sift together flour and baking powder and stir
into butter mixture. Pat into a 9 1/2 inch tart pan or a 9 inch pie pan. Bake
for 12 to 15 minutes. Remove from oven. In small bowl, beat cream cheese, sugar
and orange juice and zest until smooth. Add whipping cream and beat until
smooth. Spread evenly in cooled crust. Arrange strawberries and mangoes
carefully on tart. Heat fruit spread and water in a saucepan over medium heat.
Simmer for 30 seconds. Brush over fruit. Chill tart until ready to serve
