Fresh Strawberries Drizzled with Balsamic Vinegar

 

Prep Time: 10 minutes, Cook Time: 15 minutes, Serves 4

4 cups fresh organic strawberries
4 tbsp balsamic vinegar
4 tbsp sugar or honey
4 oz mascarpone cheese
1 tsp vanilla
2 tbsp powdered sugar
freshly cracked pepper

Stem and halve the strawberries. In a bowl, mix vinegar and sugar together and
add the strawberries. Toss to coat evenly, cover and marinate in the
refrigerator for 15 minutes. Mix mascarpone cheese with vanilla and sugar in a
small bowl. Stir until smooth. Divide strawberries between 4 bowls, sprinkle
with a pinch of freshly cracked pepper and top with a generous dollop of
mascarpone cheese mixture.
