Loveless Cafe Mini Country Ham Puffs (For the Leftover Country Ham)

 

3/4 cup chopped Loveless Cafe fully cooked spiral sliced country ham

¾ cup (2 ounces) shredded swiss or cheddar cheese

2 tablespoon finely chopped onion

1 tablespoon snipped fresh parsley

1 ½ teaspoon Dijon mustard

1/8 teaspoon ground black pepper

1 package (8 ounces) refrigerated crescent rolls

 

Preheat oven to 350 degrees.  Lightly spray mini muffin pan with nonstick cooking spray.  Finely chop ham and onion with food chopper or food processor.  Place in small bowl.  Add cheese, egg, parsley, mustard and black pepper.  Mix well.

 

Unroll crescent dough and separate into 4 rectangles.  Press together seams and roll out slightly.  Cut each rectangle into 6 pieces, using a pizza cutter or serrated knife.  Press one square of dough into each muffin cup.

 

Using small scoop, fill each muffin cup with a scant scoop of ham mixture.  Bake 12-14 minutes or until puffs are light golden.  Remove from pan; serve immediately.
