Picnic Perfect Potato Salad

 

2 pounds Red Skin Potatoes – cubed and boiled (or steamed)

1 12 oz. Bottle of your favorite Italian Dressing

1 cup chopped, cooked Bacon

1 large Yellow Onion – sliced and chopped

1 teaspoon chopped Garlic

Kosher Salt and Fresh Cracked Pepper to taste

 

Combine all ingredients together while the potatoes are still hot.  This allows the flavors to cook together and the onions to soften.  Can be served warm immediately or made the day before and chilled.  Perfect for picnics, as there is no mayonnaise to worry about.
