Polenta Lasagna

 

40 Minutes Baking Time

1/4 cut shredded carrots

1/2 cup diced onion

1 tbls of garlic (3 cloves) puree

2 tbls olive oil

1/4 cup red wine

1/4 cup fresh basil

1/2 tsp oregano- dry or fresh

1 tsp paste

1 35oz diced tomato- process 1/2 can

1/2 cup mozzarella cheese

2 sliced mushrooms

1/2 pound sausage

 

Polenta

 

2 1/4 cup polenta

6 3/4 cup water

2 tsp salt

when cooked add 1 tbls garlic

 

Bring salted water to a boil. Slowly pour in polenta in. Stir continously. 5-8 minutes. Split in half. Add 1 processed red pepper. 1/2 cup Asiago and stir in 2 hand fulls of spinach. Press between wax paper and cool.

 

Use 1 deep pan. Add a layer of marinara on bottom of pan. Top with polenta layer. Top with thinly sliced red onions. Top with layer of polenta and mozzarella cheese and sauce. Top with layer of portabella mushrooms, 1/2 cup of mozzarella and 1/2 cup of sauce. Top with layer of polenta. Top with sliced sausage of any type. Bake at 350 degrees for 40 minute.
