Sweet Potato-Maple Sausage Turnovers

 

 

2 packages (16 oz) puff pastry
Egg wash (1 tablespoon water and 1 egg)
3 medium sweet potatoes; baked
¾ lb Jimmy Dean Maple bulk sausage; browned, drained and roughly chopped
1 ½ teaspoon salt
¼ teaspoon ground clove
¼ teaspoon dried ground ginger
½ teaspoon cinnamon
1/3 cup grated gala apples
1 teaspoon honey
1 teaspoon fresh sage; minced

 

1. Preheat oven to 400 degrees
2. Scoop sweet potato flesh from skin into a medium bowl
3. Add salt, clove, ginger, cinnamon and honey
4. Using an electric beater, mix until well combined
5. Stir in sausage, apples and sage
6. On lightly floured surface, use a 4-inch round biscuit cutter to cut
     rounds from puff pastry
7. Place a heaping teaspoon of filling on one side of each circle and fold 
    over
8. Dampen edges with egg wash and pinch shut
9. Using a pastry brush, brush top of turnovers with egg wash
10. Place on a non-stick baking sheet and cook for 10-12 minutes until
      golden brown
