Gingerbread and Lemon Trifle with Melba

 

 

Gingerbread Cake

1 3/4 cups all-purpose soda

1 teaspoon baking soda

1 tablespoon ground ginger

1/4 teaspoon ground cloves

1 1/4 teaspoon salt

8 tablespoons unsalted butter (room temperature)

1 large egg

1/2 cup packed light brown sugar

1 cup dark molasses

1/2 cup boiling water

3 tablespoons finely diced crystallized ginger

2 1/2 cups Melba sauce

 

1. Preheat oven to 350 degrees and grease and flour one 9x9 pan

2. Sift the first 5 ingredients

3. In a large mixture bowl beat butter until creamy about 1 minute

4. Add the egg mix till combined then mix in the brown sugar

5. Gradually beat in molasses

6. Add the flour mixture, stir till just combined then stir in the boiling water and crystallize ginger.

7. Pour mixture into pan and bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean

8. Allow the cake to cool then slice 1/2 inch cubes.
